日本人は、古代から発酵を生活に取り入れ、各地で生産される野菜や気候、習慣に合わせて数多くの発酵食品が存在しています。その発酵食品の中で、奈良漬は漬物に分類されます。奈良漬は、約1300年前の日本の最も古い公式の記録として残っている漬物で、塩漬にした野菜・果物を、酒粕の中に漬け込んだ粕漬をルーツとしています。
1869年創業の森奈良漬店の奈良漬は、5代にわたりその技術と製法を守り抜いています。日本国内産の野菜・果実、吟味された酒粕と天然塩のみを原材料とし、甘味料、砂糖、添加物を一切加えません。職人による手作業により、酒粕の量、配分をかえ素材の持つ味や歯触り、香りを最大限に引き出し、約1年から1年半の時間を費やした奈良漬づくりを特徴としています。
その他にも、日本各地で古くから大切に栽培されてきた伝統野菜を奈良漬とする取組みや、大きさや形状で規格外となる素材を奈良漬とするフードロス問題を解消する取組みを積極的に行っています。また、ライフスタイルや食の好みに寄り添った奈良漬を使ったアレンジメニューの発信や提案を得意としています。

Since ancient times, the Japanese people have incorporated fermentation into their daily lives. There is a wide variety of fermented food throughout Japan, each varying by region depending on the locally grown vegetables, climates and customs. Naraduke is one such example.
Naraduke is said to be the oldest pickle first mentioned in official historical records dating back to 1,300 years ago.
It has its roots in Kasuduke, in which salted vegetables and fruits are pickled in sake lees. Founded in 1869, Morinaraduketen Co., Ltd. has preserved its original techniques and manufacturing methods of Naraduke for five generations.
Its Naraduke is made only from vegetables and fruits grown in Japan as well as carefully selected sake lees and natural salt, without using any sweeteners, sugar, or additives. Made by hand by artisans, the amount of sake lees is masterfully adjusted to maximize the taste, texture and aroma of the ingredients.
The process takes about a year to 1.5 years to complete. In addition, the company is engaged in turning traditional Japanese vegetables that have been carefully cultivated in various parts of Japan for centuries into Naraduke, while actively working to address the issue of food loss by making pickles from vegetables that are out of standard due to their size or shape.
Lastly, the company is also keen in sharing and proposing arranged menus using Naraduke that suit a variety of lifestyles and food preferences.
